Maez fortified wines are produced by the prestigious Cantina Martinez, founded by Carlo Martinez, in Marsala in 1866. The company is among the oldest in the city and became famous for the production of Marsala, Passiti of Pantelleria and fortified wines.
Fortified wines are wines produced using a base wine (with a minimum ABV of 12%) added to Mistelle (a must whose fermentation has been stopped by adding alcohol), alcohol, and wine or must concentrate (partially dehydrated must) in order to increase the ABV. The aging process, for almost all the products, is done by the solera method, through fractional belnding that requires the system of barrels in various overlapping rows. The array of Maez products includes Zibibbo, Moscato, and Don Sant.
