Hand-harvested in small crates, fermentation and maceration with grapes separated into steel vats with the peel intact for 15 days; malolactic fermentation followed by maturing for 14 months in used French oak barrels where the wines always remain separate.
The wines are assembled only just before being put into bottles where they age for almost 24 months.
4 months in used French oak barrels, pre-assembly, another 24 months of aging in the bottle.
Elegant and potent, intense ruby red. On the nose, it is complex with scents of red fruit and spices. The flavor is enveloping and perfectly follows through on its promising scent. It is a consistent wine with profound taste from very thick tannin from aging. It is ideally pared with grilled meats, roasts, and wild game.
